Soaked Baked Oatmeal Breakfast

This baked oatmeal is so easy to make, you just need to mix all the ingredients in a bowl, soak it overnight and put in a baking dish and bake until golden brown in the morning! Oh, it’s delicious served hot or cold!

Ingredients

2 cups rolled oats

2 cups water

2 small diced apples

1 sliced banana

1/2 cup Thompson unsulfured raisins

1/2 cup walnuts or pecans

2 tbsp coconut oil

1/2 cup Greek yogurt or raw dairy milk

3 tbsp maple syrup

4 tsp ground cinnamon

1/2 tsp ground nutmeg

Pinch unrefined Himalayan Salt

1 tbsp butter for baking dish

Optional: Add 2 raw eggs prior to baking.

Directions

  • The night before: mix all ingredients in a bowl and mix thoroughly together. Let soak on the counter top.
  • In the morning: preheat the oven to 355˚F.
  • Butter a baking dish liberally and place the oatmeal mixture in the baking dish.
  • Bake for 45-50 minutes or until golden brown.

Tips

  • You don’t have to use almond milk as I did, any other plant milk will work, or raw dairy milk.
  • Feel free to use other sweeteners, fruits, dried fruits, nuts, seeds, spices or any other ingredient you like.
  • If you can’t eat oats, you could try buckwheat.
  • Double the recipe if you want and eat it for two days in a row. It stores in the fridge for 2 days or freeze it for weeks!

Serves 4 - 5

Note: Soaking grains such as oats overnight helps to reduce phytic acid content and improves digestibility.
