Rick Kohut | JAN 18, 2025
Ingredients
6 pounds beef marrow and knuckle bones
½ cup raw apple cider vinegar
4 quarts filtered water
3 celery stalks, halved
3 carrots, halved
2 med. Onions, quartered
2 cloves garlic
3 sprigs thyme
3 bay leaves
Handful of fresh parsley
Pinch of unrefined Sea salt
10 peppercorns
Instructions
1. Place bones on pan and roast in oven for 15-20 minutes at 400⁰˚˚F until browned. Turn bones ½ way. This brings out the flavours.
2. Place roasted bones in a pot or a crockpot, add apple cider vinegar and cold water, and let the mixture sit for 1 hour so the vinegar can leach the mineral out of the bones.
3. Add more water if needed to cover the bones.
4. Add the vegetables and herbs then bring to a simmer (avoid a rolling boil)
5. Skim the scum from the top and discard as needed.
6. Reduce to a low simmer, cover, and cook for 24-72 hours (if you're not comfortable leaving the pot to simmer overnight, turn off the heat and let it sit overnight, then turn it back on and let simmer all day the next day)
7. During the last 10 minutes of cooking, throw in a handful of fresh parsley for added flavor and minerals.
8. Let the broth cool and strain it, making sure all marrow is knocked out of the marrow bones and into the broth.
9. Add sea salt to taste and drink the broth as is or store in fridge up to 5 to 7 days or freezer up to 6 months for use in soups or stews.
Beef bone broth is a nutrient-rich liquid made by simmering beef bones and connective tissues for an extended period. It has gained popularity for its numerous health benefits, which are derived from its rich nutritional content.
Of course you can buy good quality bone broth from your local health food store, but we encourage you to make it yourself! First you must source high quality bones from local ranchers.
Here are the key health benefits:
1. Rich Source of Collagen and Gelatin
Benefits: Collagen and gelatin support skin elasticity, joint health, and gut integrity. They help maintain healthy connective tissues and may reduce signs of aging.
How it Works: When bones and connective tissues simmer, collagen breaks down into gelatin, providing amino acids like glycine and proline.
2. Supports Joint Health
Benefits: Bone broth contains compounds like glucosamine and chondroitin, which are essential for cartilage health and may reduce joint pain and inflammation.
How it Works: These compounds are naturally present in connective tissues and bones, making bone broth an excellent natural source.
3. Improves Gut Health
Benefits: Gelatin and amino acids (like glutamine) found in bone broth help to repair and strengthen the gut lining, making it beneficial for conditions like leaky gut syndrome.
How it Works: Gelatin acts as a protective barrier for the mucosal lining of the gut, while glutamine aids in cell regeneration.
4. Promotes Better Sleep
Benefits: The amino acid glycine found in bone broth promotes relaxation and improves sleep quality.
How it Works: Glycine has a calming effect on the nervous system and helps regulate the body's internal clock.
5. Enhances Skin Health
Benefits: Collagen in bone broth helps improve skin elasticity, hydration, and overall appearance.
How it Works: Collagen production naturally declines with age, and consuming bone broth replenishes this vital protein.
6. Provides Essential Nutrients
Benefits: Bone broth is a source of calcium, magnesium, phosphorus, and potassium, which support bone health, muscle function, and electrolyte balance.
How it Works: These minerals leach out of the bones during the long cooking process, making them easily digestible and bioavailable.
7. Anti-Inflammatory Effects
Benefits: Bone broth contains anti-inflammatory amino acids like glycine and proline, which may reduce systemic inflammation and promote healing.
How it Works: These amino acids help modulate immune responses and reduce oxidative stress.
8. Aids Weight Management
Benefits: Bone broth is low in calories but rich in nutrients, making it a satisfying option for those looking to manage their weight.
How it Works: The high protein content promotes satiety and helps maintain muscle mass during calorie-restricted diets.
9. Hydration and Electrolyte Balance
Benefits: Bone broth provides a hydrating mix of water, electrolytes, and minerals.
How it Works: It replenishes fluids and electrolytes, especially after illness, intense exercise, or fasting.
Tips for Maximizing Benefits
Use high-quality bones from grass-fed, organic beef to ensure maximum nutrient density.
Simmer for 18–36 hours to extract the most nutrients.
Add vegetables, herbs, and apple cider vinegar to enhance flavor and nutrient content.
Bone broth is not only a comfort food but also a functional beverage that supports overall health.
