Arugula Fennel CB2 Hemp Seed Lemon Salad

  • 3 tablespoons CB2™ Hemp Seed Oil
  • 3 teaspoons Parthena extra-virgin olive oil
  • 1/2 teaspoon Himalayan pink salt
  • Lemon zest(consider organic, and be sure to wash lemon first)
  • 1/2 fresh squeezed lemon (strain seeds)
  • 1/2 cup arugula
  • small fennel bulbs, cored and thinly sliced
  • 2 tablespoons toasted pine nuts or pecans
  • grape tomatoes, halved
  • Fresh ground peppercorns


Make the dressing by whisking the oils, salt, lemon zest, and lemon juice together in a small bowl; set aside. Place washed arugula leaves into a large salad bowl. Sprinkle the fennel, pine nuts or sunflower seeds, grape tomatoes, over top. Toss with the lemon dressing immediately before serving. Enjoy the taste and health benefits!
